Insta-Friday in real life - pizza edition



Here's to Friday! If you're at work, you're probably doing the bare minimum, just waiting for the weekend to arrive. If you're at home with kids, you're probably waiting for the husband to get home so he can take over the diaper changes and the walks to the park.

However you spend your weekend, make it a good one. I hope all of my American friends enjoy their Memorial Day weekend.

And now for Insta-Friday, a look at the week in cell phone photos. Apparently this week was largely about pizza for us. In my What I Ate Wednesday post this week, I mentioned that I am consumed with thoughts of sushi and pizza. I found many pizza pics on both my cell phone and my Nikon this week.


The pizza obsession started on Sunday, when we prepared three different pizzas for dinner - one for the kids, one for me and one for my husband. As I mentioned on Instagram (@ziajojo), our willful daughter "helped" (ie. shouted orders) with the pizza making. That contributed to Mom and Dad cracking open some beverages - Sleeman beer in his case, Bacardi Real Jus in my case.


My pizza was my new favourite - no sauce, no cheese, just rapini. I boiled the rapini first (until tender) and then sauteed it in olive oil and minced garlic and shook on some salt. I drizzled my pizza dough with olive oil, topped it with the cooked rapini and baked it for 10 minutes. I had made the dough in the bread maker using light spelt flour (following the machine's directions for white flour pizza dough).


My daughter had her friend over one evening this week. I happened to have bought some pizza dough at a local bakery.


So I figured why not get the kids busy making their own personal pizzas.


They struggled with the dough a bit, but I reminded them that we weren't looking for perfect circles. Whatever the pizza is shaped like, it will taste just as good.


With no rapini in the house, I decided to try broccoli. I put about an inch of water in a pot, threw in the broccoli florets, topped them with minced garlic, olive oil and salt, put a lid on and boiled the water for about 10 minutes. As with the rapini pizza, I drizzled olive oil on the dough first, added my veggies and then baked the pizza at 450°F for about 10 minutes.


Here are a couple of the cheese pizzas the kids made.


The whole process is so easy that I decided to make myself another pizza for lunch the next day using the leftover broccoli.


The kids thought I was a bit strange eating a pizza covered with broccoli, but I couldn't get enough of it!
