What I Ate Wednesday

 

Happy What I Ate Wednesday! Thanks for your very kind comments on my high school grad dress post yesterday. I have met the sweetest people through this blog.

I hope you are enjoying some good, healthy food this week, along with a few treats. We all need a treat now and then, especially when it's January in a cold climate. Sunshine, why have you forsaken me?


Yesterday's breakfast was quick cooking steel cut oats topped with hemp hearts, a teaspoon of maple syrup, fruit and coconut milk.

Turns out that wasn't enough to satisfy me. A little bit later I munched on a few Barbara's Bakery peanut butter puffins, along with my decaf green tea.


Today, I had instant oatmeal from Bakery on Main, along with The Simply Bar in caramel peanut flavour. I recently won a bunch of goodies over at Natalie's blog. These were the first two items I dug into.


One day I had my favourite lazy lunch of tortilla chips with Daiya vegan cheese melted on top. I served them with salsa and homemade guacamole.


On Sunday, my husband made the cashew noodle stir-fry that I had listed for Saturday on our weekly meal plan.


Yesterday, I munched on the after-school snack I prepared for the kids. They are really enjoying the fruit platters. Mind you, yesterday they also got an extra treat -- heart-shaped doughnuts from Tim Hortons.

A day after I went grocery shopping, almost all the peaches, pears and strawberries were gone. When I expressed my amazement, my 10-year-old son said, "I thought you wanted us to do well with our new year fruit challenge?" I didn't even know he heard me talk about the fruit and veggie challenge. I told him I certainly wasn't upset that the fruit was almost gone, I was just surprised.

He went grocery shopping with me this week and asked if we could buy dragon fruit, which I normally don't buy. The kind lady at the grocery store cut one open for us so we could taste it. It's similar to kiwi, but a little blander. The pink peel is beautiful. I almost hate to cut it.

  2. Nice eats Joann! I'm glad you've already tried out the snacks you won :)I have always wondered what vegan cheese tastes like, never tried it before. Is it good?

    1. For the most part, I don't like vegan cheese, but I do like the Daiya brand. I would start with that. :)

  3. My husband and I want to expand our fruit and veggies eating by trying at least 2 new products every month! I have never tried dragon fruit but it looks absolutely beautiful. I'll have to look for it.
    I found you over at WIAW and am a vegetarian but try to cook a lot of vegan meals so I will definitely be following this blog.

    1. The dragon fruit is worth buying just for the appearance. It's nice and bland for nauseous pregnant ladies too. ;)

  5. I have been having terrible luck with fruit lately - raspberries getting mushy too quickly, soft apples, cantaloupe with no taste, watermelon with no taste -I like something with at least a little bit of flavor - your fruit plates always look delicious!!!

    1. Oh, too bad Jill. I hate when the raspberries go quickly. We got some good sturdy ones earlier this week. My daughter ate them all right away. Cantaloupe and watermelon are hard to pick. All I know is that watermelon should have a yellow patch on it to show that it ripened on the ground. That seems to help me.

    I need to check out the hemp hearts and Silk coconut milk! All of the food looks delicious (beautiful photos!)

  7. hi Jo! Thank you for joining me. I had a crazy day yesterday and was unable to say thank you then. I shall be in blog-land a ton today. Interesting post and eating style you have. I am similar in that I can't eat dairy. I sort of don't like it either. I tried vegan about 4 years ago and it made me crazy ~ I'd admire those that can do it. But I don't eat any beef EVER. I don't like it at all. I do fish, turkey and eggs. I see you have poetry. ME TOO! (see page at top near my banner) Have a happy day, okay? ♥ Renae

  8. Everything looks tasty as always! Those cashew noodles look amazing! I love citrus fruits the most, I think. Or maybe cherries. Oh, but I do love berries when they're in season... guess I have no idea what my favorite is!

  9. That all looks so delicious. On the fruit tray, I have to ask, what is the pink rimmed item with a white middle and black dots?

    It just doesn't look like anything I've ever eaten before.

  10. You inspire me with your healthy eating! I'm terrible about eating fruit in winter, when there's no farmer's market and just the sickly looking grocery store fruit available. As far as favorites go, it would probably be strawberries or kiwi for me, though I may have to give dragon fruit a try now that you've demystified it a bit.

    1. Thanks Heather. I eat more fruit when I'm trying to get the kids to eat fruit. Otherwise I'm lazy about it. I probably wouldn't have tried the dragon fruit if the lady hadn't cut it for us. I worry about how to prepare new foods and then I just don't try.

  14. I am on a strawberry/blueberry kick lately! I dip my spoon in peanut butter and then scoop up some berries- so delicious!

    I want to try dragonfruit now!!
