What I Ate Wednesday


What I Ate Wednesday is here again! Can you believe it is the middle of August?

I am once again sharing some highlights from my last week of eating.

Last night, we decided to try making maki sushi for the second time. We found it easier to roll this time. We had the same fillings as last time, along with sautéed mushrooms. The mushrooms made for a yummy filling!

My husband also made miso soup this time, with chunks of soft tofu in it. It was delicious, and even the kids enjoyed it. They are fairly picky eaters (mostly the girl) but my son loves vegetarian sushi and my daughter is enjoying it more and more each time we have it.


Another evening, we had a simple meal of fried rice, breaded and fried tofu, corn on the cob and broccoli. The children love broccoli when we cook it with minced garlic, olive oil and salt.

My daughter had a friend over that night. The kids were discussing tofu. My daughter's friend said, "I don't like tofu," just as she put a chunk in her mouth. I'm not sure what she thought it was, but it gave the kids a good laugh. She later told her mom she loved it.


For a snack later that night, we enjoyed Jiffy Pop popcorn. We have a popcorn maker, but I bought this for when we were at the cottage, and didn't end up using it. How fun is this method of making popcorn?



I made a banana carrot cake topped with brown sugar icing one day. I added some blueberries that I wanted to use up, and found that the whole thing became just too moist. The icing was delicious though.


I also had some trouble with yesterday's breakfast...blueberry banana pancakes. I don't know if my griddle is getting too old, or I added too much (sticky) banana, but I gave up on the batter after a while, because I was sick of scraping the pancakes off the griddle.

I also forgot to photograph the pancakes until I was done eating. These few were saved for my husband because he was at the gym when we ate.

  1. I also make sushi at home and we love it. I never thoguht about mushrooms in it. I would love some new ideas on what to put in it. Campfire popcorn is the best. great post.

    1. Thanks Larisa. We want to expand on the fillings too. When we go out for sushi, I love crispy rolls and sweet potato rolls. More complicated, but we will have to think about doing that. :)

  2. Homemade miso soup sounds amazing! Love the tofu story- if you make it properly, it's impossible not to like haha:) your carrot cake looks delicious, too!

  4. It all looks yummy! Now I want sushi. And I need to get some jiffy pop- we have no microwave and I haven't had popcorn in years :)
