What I Ate Wednesday, pool party edition


Hello and welcome to another edition of What I Ate Wednesday.

Taking a look back at this week’s food, I see that we focused on the barbecue for dinners, and barbecue leftovers for lunch. I guess we naturally gravitate away from the stove when the weather is this hot.
We also enjoyed pool party munchies at the home of some friends.

The bbq dinner above consisted of veggie burgers, portobello mushrooms (which I served on top of my burger), potatoes, zucchini and red peppers. My husband kindly made the leftovers into a delicious pasta for lunch the next day.


The next barbecue dinner was similar, but we did tofu instead of veggie burgers, and we added some rice and a green salad. I used up the leftovers to make a sandwich on the panini press the next day. I added a slice of vegan cheese and some mayonnaise.





At our friends’ pool party, I enjoyed a DELICIOUS sangria. I am awaiting the recipe and will share it with you when I get it.
I also plan to share the recipes soon for salsa and olive tapenade.

  2. Oh yummy again! We've been low key this week {though we had lovely barbecue Tennessee style & leftovers turned in to carnitas-- which I should have chronicled my hubby making, but didn't..sigh}

  6. Vegetarian barbecues are my favorite thing and I don't feel like I get them nearly often enough . Your tofu looks great- I can't ever get a good sear.

  8. I like the idea of using the leftover grilled veggies in a grilled sandwich. I bet that tastes pretty amazing. :)
