What I Ate Wednesday, Easter edition


I was off watching my son's school basketball tournament today, so I'm late with my What I Ate Wednesday post. Here's a quick look at some of the meals I enjoyed this week, starting with a tofu and veggie stir-fry on top of Chinese noodles.



My husband made pizzas another day. That's my vegan Daiya cheese and broccoli pizza on the right.


We had two Easter dinners this past weekend. The first was at my parents' place and I didn't even snap a photo. Too hungry! We had a Gardein vegan roast with my mom's mashed potatoes, sweet potatoes and other yummy sides. The next day we ate a meal prepared by my sister-in-law and my mother-in-law. That's my sister-in-law's delicious vegetable soup, above.


And this is my mother-in-law's famous (and incredible!) tofu lasagna.


As if that weren't enough, I followed the soup and lasagna up with a plate of salad, vegan sausage stuffing, rapini, stuffed artichokes and potatoes, veggie balls and breaded tofu. So good!

  1. That all looks delicious, especially that lasagna! I've had a delay with getting my Easter blog post up, hopefully later tonight but I had made some black pepper tofu served with rice, diet portion (waaah) potato and sweet potato, stuffed vine leaves, dip and the dessert was a super healthy banana coconut pie :D

  2. These all look amazing, Joann. And you've inspired my to try out a tofu lasgna now. I've always stuck with the veggies and daiya cheese, but tofu sounds great. :)

    Is your extended family vegan/vegetarian as well or do they just cook to fit your fams dietary needs?
