What I Ate Wednesday (A Day of Vegan Eats)


I don't have any exciting new meal ideas to offer this week. I'm afraid it's just been one of those weeks. We are eating a lot of the same old same old. If you follow me on Instagram, you might know that both of my kids injured their ankles in the past week. My dancer is in a boot for several weeks while my basketball player is limping through his days. It means a bit (okay maybe a lot) more of me waiting on them (hand and foot) and a few more appointments and drives to and fro. Which leaves little inspiration for crafting new and exciting meals and recipes. But we have been eating. That's an achievement, right? As I didn't do a What I Ate Wednesday post last week, I'm starting this post with Easter, above. Well that's our Easter breakfast anyway. After the egg hunt, we enjoyed blueberry pancakes, vegan sausage and a fruit salad. The kids also had loads of chocolate.



I am off my oatmeal kick right now. I did have one lone bowl of oatmeal last week, topped with fruit, dried cranberries and maple syrup.


But for a look at a full day of my vegan eats, I was back to comforting raisin toast with vegan margarine for breakfast. I really don't feel like eating until after 10, but if I wait that long I get kind of shaky, so raisin toast is easy to get down.


Lunch was Kathy's vegan chicken soup. It's super easy to whip together and it's quite filling with the faux chicken chunks. We usually enjoy it with some toast on the side.


Dinner was my favourite pink sauce from Chloe's Vegan Italian Kitchen: 150 Pizzas, Pastas, Pestos, Risottos, & Lots of Creamy Italian Classics. I love to serve this sauce on top of spaghetti or spaghettini or capellini - any long, skinny pasta in other words. It is basically a red tomato sauce, with the addition of cashew cream and fresh basil.


When I make this pink sauce, I eat it for three days straight - and enjoy it every single time.


My niece has to use up quite a bit of money on her university meal card, so she bought us a box of these mini Oreos. I actually requested them, but odds are most of them will be consumed by others in the house. I got the box yesterday and I actually hid it today because my one child would eat nothing but Oreos until they're gone. Nevertheless I had some for an evening snack with my tea last night.
