It's time to take advantage of all those fresh, crispy apples available to us in fall. As we do each September, we recently visited our favourite apple orchard to pick delicious, crunchy apples right off the tree. Apples truly are one of Mother Nature's wonders, providing us with benefits such as soluble fibre and disease-fighting antioxidants. Plus apples are highly portable and hardy, making them an ideal snack to take to park, school or work. Of course, you could also turn them into an equally portable and possibly even more delicious snack, like these Vegan Apple Crumble Muffins.
I'm a huge fan of muffins, especially in cooler weather. When the temperature drops, you don't necessarily want a cold smoothie in the morning. On days like that, a fresh, warm muffin just out of the oven is the thing to get you going. And you can squeeze in nutritious ingredients that will set you on the right path through your day.
To moisten these apple muffins, I used vanilla-flavoured Veggemo. Veggemo can be used anywhere you would use milk or any other non-dairy beverage. Use it for coffee, tea and smoothies, or drink a tall glass of it with your favourite vegan oatmeal cookies. My daughter loves to pour Veggemo over cereal. Veggemo is not only vegan, it's also rich in calcium and vitamin D and provides an excellent source of vitamin B12.
Before beginning to mix ingredients, you'll want to grate the apples in a food processor and melt the coconut oil. (I like to melt coconut oil in a small pot on the stove.) Once the apples and oil are ready, these vegan apple crumble muffins can be whipped together quickly and easily. You'll be rewarded with a spicy, fresh scent as you mix cinnamon and nutmeg into flour. And later you'll be rewarded with warm muffins. So there's that.
The crumble topping is a mix of spelt flour, oats, cinnamon, Sucanat or brown sugar and coconut oil. It gives these apple muffins a little something extra. The crumble is kind of crispy, so it contrasts nicely with the light and tender muffins.
Whip a batch of these apple crumble muffins up in the morning so you have a warm breakfast or a tasty mid-morning snack for your work or school break time. I find they taste fresh for a good few days, but normally we don't let muffins get that old in this house. You can also wrap them individually and put them in the freezer to take with you when you need a nutritious snack on the run.

Apple Crumble Muffins (Vegan)

Ingredients (12 muffins)
- ⅓ cup coconut oil, melted
- ½ cup sugar
- 1 tsp egg replacer powder mixed with 2 tbsp water
- 3/4 cup vanilla flavour Veggemo non-dairy milk
- 1 ½ cups light spelt flour
- 2 tsp baking powder
- ¾ tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- ¼ tsp nutmeg
- 1 cup shredded apples
- ¼ cup light spelt flour
- 3 tbsp quick oats
- 1 tsp cinnamon
- 1 tsp Sucanat or brown sugar
- 1 tbsp melted coconut oil
Instructions
Preheat oven to 400°F.
Line a muffin tray with paper liners.
In a large bowl, whisk together coconut oil, sugar and egg replacer until smooth. Whisk in Veggemo. (If the coconut oil turns a bit chunky, that’s okay.)
In a medium bowl, combine flour, baking powder, baking soda, cinnamon, salt and nutmeg.
Add dry mixture to wet mixture. Stir. Fold in shredded apples. Divide muffin batter among prepared muffin cups.
In a small bowl, combine flour, oats, cinnamon and sugar. Stir in oil until crumbly. (I find it most efficient to use your fingers to help things along.)
Sprinkle crumble topping on muffins.
Bake for 20 minutes or until a toothpick inserted in the centre comes out clean.
