What I Ate Wednesday (A Day of Vegan Eats)


Happy Valentine's Day friends! Whether you are celebrating solo, as a pair, in a group or not marking Valentine's Day at all, I hope you treat yourself well today. Do something you enjoy doing and give yourself a little treat. Because it's What I Ate Wednesday, I'm thinking it should be food. Preferably chocolate. But you do you (as they say).

Scones are always a nice choice too. Like this vegan raisin scone, above, that I enjoyed with a nice cup of decaf green tea in my husband's Jimi Hendrix mug. Because sometimes I get bored with my usual mugs. You too?



Other food highlights from this past week: I created a vegan tofu bowl recipe for another blog. I'll let you know when it's been posted. We ate the bowls for dinner one night. They are very healthy and the whole family (even my teens) enjoyed them.


For lunch the next day, I used up the remaining bowl toppings for a stir-fry. I added black beans and some cauliflower that I had previously roasted.


In terms of a full day of vegan eats, on Tuesday I started my day with oatmeal topped with fresh berries, pumpkin seeds, dried cranberries and maple syrup.


Lunch was leftover vegan chicken soup that my husband made for dinner (at my request) on Sunday. He's supposed to cook on the weekends, but sometimes needs a gentle (ahem) reminder.


Wait, we're on dinner right? Yes, but Tuesday was Shrove (aka Pancake) Tuesday. My daughter requested pancakes for dinner because, for one thing she loves pancakes. And two, I put money in the kids' pancakes on Shrove Tuesday. Just like my mom always did. I'm not even sure why we do it, but it's a lot of fun. (Mainly for the kids, as I have to wash the coins before and after, haha.) We also had hashbrown sticks and fruit salad. This photo was actually taken the next day (when light was more plentiful) and there were no hashbrown sticks left.

Okay, now that that's done, who is ready to eat some chocolate?
