Zesty Peanut Lime Chopped Salad #CincoDeMayo (Giveaway)


Happy Cinco de Mayo! Here in Canada, I suspect most of us celebrate by downing Corona and eating tacos. But for those withe Mexican heritage, Cinco de Mayo means something more. Apparently those in the United States tend to celebrate this day the most. Head over to this interesting article for five facts that may surprise you about Cinco de Mayo.

And if you are looking to celebrate with a special meal, the folks at Que Pasa Foods have some yummy ideas for you! They suggest serving a big bowl of this Zesty Peanut Lime Chopped Salad - not just today, but any day you want a delicious spring meal. I think this would be a great potluck dish, served with broken up Que Pasa purple corn chips on top.

I veganized Que Pasa's vegetarian recipe by substituting marinated tofu "feta" for cheese. This salad features healthy, filling and tasty ingredients such as black beans, avocado, kale and edamame. All that deliciousness gets topped with a zesty dressing that includes lime juice, peanut butter and minced garlic. And isn't it such a pretty salad? I think it would really wow party guests.


Que Pasa organic, non-GMO chips are made from whole kernel corn, ground with real volcanic lava stone – the traditional way they’ve been made in Mexico for generations. These chips are also delicious and crunchy. I buy them all the time! Corn is often genetically modified so I feel better about buying tortilla chips that are non-GMO. Zesty Peanut Lime Chopped Salad

Ingredients (serves 5 to 6)
  • 3 cups chopped kale
  • 2 cups spring mix
  • 1 ¼ cups black beans
  • 1 ¼ cups corn
  • 1 1/2 cups edamame
  • ¼ cup shelled peanuts
  • 1 cup dried pitted dates, chopped
  • 1 cup cubed marinated firm tofu (optional)
  • 1 avocado, chopped
Peanut Lime Dressing
  • ¼ cup sunflower oil
  • ¼ cup lime juice
  • 1 tbsp. peanut butter
  • 1 tsp sugar
  • 1 tsp soy sauce
  • 1 tbsp. minced garlic
  • 3 tbsp. lime zest
Instructions

In a glass mason jar with screw-top lid combine the Peanut Lime Dressing ingredients. Shake well until combined and set aside.

In a large salad bowl toss together the chopped kale and spring mix. Add the rest of the salad ingredients (black beans, corn, edamame, peanuts, pitted dates, tofu and avocado) on top. Arrange in rows if you like – just make sure to toss together upon serving!

*To prepare optional marinated tofu "feta," mix in a bowl 1/2 cup of water, juice of one lemon, 1/4 cup apple cider vinegar, 1 tbsp. olive oil, 1/2 tbsp. oregano, salt and pepper to taste and 1/2 tsp garlic powder. Stir in tofu and marinate for at least 3 hours or overnight.
