What I Ate Wednesday


Happy Wednesday! I thought I'd start off this What I Ate Wednesday with a photo of the adorable emoji cookies my daughter made this morning. She is 10 and she has started making vegan chocolate chip cookies regularly all by herself. Today she decided to decorate them with emojis. Considering it was her first time, and we used a new icing recipe, I think they are pretty darn cute!


Other things we have snacked on this week - some fruit, although not as much as I would like because I can't seem to find one decent pack of fresh strawberries in any grocery store. But we did have this plate of strawberries, apple slices and plum slices one day.


When I couldn't find strawberries I settled for green grapes and a whole mess of blueberries. We had them for lunch one day, along with leftover broccoli and baby bella mushroom pizza and a salad with roasted chickpeas.


For my full day of eats, I'm looking at yesterday. Prepare to be impressed! Not. I wasn't much feeling like eating yesterday actually. But I can always eat muffins no matter what. So my girl and I made Cherry-Almond Muffins from Vegan with a Vengeance, 10th Anniversary Edition: Over 150 Delicious, Cheap, Animal-Free Recipes That Rock. I didn't even put in the sliced almonds but they were still really great.



Still uninspired, I had rice crackers, hummus and baby cucumbers for lunch.


For dinner, my husband made some penne pasta and added kidney beans to a sauce he made a couple days earlier. There was salad too, but I didn't eat it. Bad girl.



Before heading out to my son's soccer game, my daughter and her friend asked for an ice pop. (I got a big box of them from Costco. They are kind of fruity and kind of not-that-nutritious. Somewhere in the middle.) I decided to have one too.

I had another muffin later too.

  1. It is too darn hot up here to be food inspired! We've been having humidity, thunder, rain and heat-- everything feels soggy lol. Wonderful cookies & as always, nummies galore on your end of the continent!

    1. It is boiling hot here too...and humid...but no rain. You can barely breathe outdoors.

  2. Love the emoji cookies! No icy-poles (ice pops!) for us, way too cold so I'll stick with puddings ;)
