What I Ate Wednesday

 

My mid-winter obsession with fruit continues. I stocked up on tons of frozen fruit last week because there are only so many times I want to get fresh berries at the grocery store in one week. The frozen fruits come in handy in the meantime. One day I was craving a warm treat, so I whipped up an easy batch of vegan scones and threw a handful of frozen mixed berries into the mix.



I have eaten a few meals out this week, including this past Saturday at my in-laws' 50th anniversary party. The nice caterer made me pasta with tomato sauce (instead of the cannelloni that others were having). His son made the vegetarians among us this lovely stack of grilled vegetables too.


I have also been out for all-you-can-eat sushi twice in the past week, once with my husband and once with my son, above.


We had a rare mother-son date, during which we gorged ourselves on maki sushi (like our favourite veggie green dragon rolls, pictured), fried rice, miso soup and lots of other goodies. So much so that we could barely walk out of there.


My Tuesday day of eats began with a Yonanas breakfast...again. I have been eating so many of these fruit blends for breakfast and evening snacks lately. Most are a combination of bananas, strawberries, cherries and sometimes blueberries. Every few times I throw a few chocolate chips on top. This is actually a photo of the Yonanas I had in the evening last night. I neglected to take a photo in the morning. So, yes, I had this twice yesterday! Often I have it in my new favourite mug - the Valentine's Day painted mug I created with my little girl.


For a mid-morning snack, I had a cup of decaf green tea with a Nature's Path Envirokidz peanut choco crispy rice bar (contains honey). My daughter and I fight over these, because she wants to eat them every day and I like to save a few for the odd time I want to enjoy one.


With no dinner leftovers available for lunch, I put a bun in the Panini press with some vegan cheese. I then added tomatoes, vegan ham, vegan turkey and some salad greens.


I washed it down with a glass of organic Kiju lemonade. I don't often drink juice because I don't like to "waste my calories" on juice. But I had a craving for a sweet drink and it's better this than Coke.


For dinner, I made the very quick pink pasta sauce from Chloe's Vegan Italian Kitchen. My daughter had to be at dance class early and I wanted her to have dinner first. This is a simple, tasty and FAST sauce for a weeknight.

  4. Your scones look seriously amazing! This week I've been obsessed with "protein icecream" - frozen fruit, cottage cheese and peanut flour blitzed up for the most amazing creamy treat!

    1. NEVER tried sushi? Shocking. Ha ha. You can't throw a rock without hitting a sushi restaurant around here. Seriously though, I came to it pretty late...and I don't eat fish - just veggies.

  9. Oh that sushi looks so good. I feel like we are really boring with our veggie options (W just really likes avocado maki). We need to branch out!
