What I Ate Wednesday


You know when you're sick and you can't eat much? That was me last week. In the midst of a flu (or whatever that wicked, wicked virus was), I (shamefully) recall looking down at my belly and thinking, "my stomach looks pretty flat." When I finally hobbled woefully downstairs after a few days in bed, my mom said, "You look skinnier already." And I said, "I know" with a distinctive hint of joy in my voice. It's sad, but true. That is the one up-side to being sick - pride in your flatter tummy.

In this case it's easy go, easy come, though, because I don't really see a big difference now. To be honest, food turns me off a bit still. But I didn't mind swallowing a bunch of pasta and pizza when my husband made it this past Sunday. He made rapini pizza (my favourite) for me and pasta with Yves vegan meatballs. Pictured is the lunch portion I had the next day. I stirred some leftover chickpea salad into the pasta for extra nutrition.




Other than that, I don't have a lot of food photos to share. I'm sure you understand why! I simply photographed everything (or just about everything) that I ate yesterday. Starting with leftover vegan blueberry pancakes for breakfast.



And leftover Lentil-A-Roni that I had made (from a recipe in Isa Does It) the night before, along with some easy biscuits from How It All Vegan!. I make the lentil dish a lot, and I don't think the family is thrilled about it, but when you are getting over an illness you fall back on easy comfort foods. Am I right?



For dinner I made a quick fried rice with frozen veggies and Gardein vegan faux chicken. My son and I followed that up with the ugliest kale and fruit smoothie you have ever seen. But tasty. And nutritious. I didn't take a photo because it was dark by the time we made it. The ugliness of the smoothie combined with the yellow indoor night would have been too much to take.

  1. Oh no! All the food looks delicious, but it's awful to be sick. Hopefully you are feeling (and eating) back to normal. Happy New Year :)

    1. Thanks Lilly. I forgot how awful it is to be sick. I felt like it was such a waste of time too. I'm eating pretty normal. Let's just say I don't mind chocolate. ;)
