What I Ate Wednesday


The weekend was so busy I barely had a moment to rest. We went to bed at 3:00 a.m. on Saturday and had to be up at 8:00 a.m. to get ready for my mom's birthday party on Sunday. The point being, I am still feeling a bit sluggish a couple of days later. So, as I share a look at my Tuesday eats, you'll see that I kept it pretty simple. In the morning I nibbled on a fruit and nut trail mix.


A little while later, I had toast with peanut butter and jam and my usual cup of decaf green tea.


For lunch I had a leftover "meatball" sub that my husband had made the night before using Yves veggie meatballs, pizza sauce and Daiya vegan mozzarella shreds.


I also nibbled on some watermelon.


For dinner, I roasted vegetables, including carrots, potatoes, yellow pepper, cauliflower, broccoli and baby bella mushrooms. The last three items were pre-cut. I was craving veggies big time, but not feeling like cutting them up. I also had Gardein vegan chick'n nuggets.


Then I had salad with carrot shreds, cucumber, cabbage and cherry (grape?) tomatoes. While I was browsing for pre-cut veggies at the grocery store, I spotted the prepared salads. I don't often buy salads already made, but I was in the mood for minimal preparation.

  1. I don't often buy the pre-cut stuff but Costco sell the bags of coleslaw mix which comes in really handy if I want to make spring rolls. Even though I have a food processor with shredder, sometimes I can't be bothered going to the effort. I wish we had those Gardein nuggets here, they look so good!

    1. That sounds like a great idea (the slaw for spring rolls)! I want to try that. I would never make them (and actually don't make them) if I have to shred the mix. The Gardein nuggets are soooo tasty. :) Jo

  2. I do have a few bags of cut vegetables to roast when I'm too tired or lazy to do it myself. I've also started buying pre-cut pumpkin because they're so much more trouble to cut.

  4. Looks fantastic, I'm not a a veggie or vegan guy but I will admit I see many dishes that I wouldn't mind eating. :-)

  7. I do buy pre-cut veggies on occasion.. I find I am more prone to snack on baby carrots then take the time to cut up the large ones... I SHOULD get into the habit of cutting items up when I get home from the store so they are basically ready to go when I want, but I haven't QUITE got there yet :)

    1. Oh my gosh, I rarely ever cut up the regular carrots now. It's all baby carrots over here. I should be cutting stuff up for the week too, but it ain't happening. ;) Jo
