What I Ate Wednesday


This week is the "Oh crap, it's the end of summer vacation and we haven't accomplished any of our home projects" week. That means painting, organizing and purging, with a wee bit of cooking tossed in. It also means I haven't taken as many food photos. So I'm going to share a single day's worth of food pics from yesterday.

I started the day with Bob's Red Mill 7 Grain Hot Cereal. It reminds me of the Red River Hot Cereal I enjoyed as a child. I served it topped with brown sugar just as I did as a child. But I use soy beverage now instead of dairy. The 7 grain cereal keeps me full for a while. It's a combo of wheat, rye, triticale, oats, oat bran, barley, brown rice and flaxseed, so it's full of fibre, protein, vitamins and minerals.


For lunch, I cooked gluten-free spaghetti. I then sauteed leftover vegetables from the previous night's barbecue dinner - mushrooms, peppers and potatoes - in olive oil with a lot of minced garlic. I topped it with Bragg's Liquid Aminos for flavour.


I snacked on dried apricots after lunch.


For dinner we had a mixed greens salad with carrots and cucumber...


And baguette slices topped with a jarred bruschetta from Trader Joe's. It has a very good flavour, but I would like the tomato chunks to be a bit smaller.


My daughter and I made Lentil-A-Roni from Isa Does It. I'm trying to involve the kids in the cooking so maybe they'll actually eat the food. (Wouldn't that be nice?) My son isn't a fan of the Lentil-A-Roni, so I told him he would be responsible for making himself a healthy substitute for dinner. He elected to have some Lentil-A-Roni. It was one of those rare moments where you feel like a parenting genius.

  1. I wish my children would eat the lentil-a-roni! I'm going to try it again for Vegan MoFo in case my son surprises me. He has never had a burger (he hates the look of them) but actually asked for a bite of mine yesterday, so I'm pouncing on that slowly opening window of opportunity! That hot cereal mix looks really good!

    1. I find my kids constantly change their eating habits, sometimes for the better and then for the worse and back again. So I suppose all we can do is keep exposing them to healthy foods and hope that it takes!! Veggie burgers are definitely handy for a quick meal (unless you are making your own?) :) The hot cereal mix was on sale at the grocery store near my mom's. It was so cheap and I quite like it.

  2. Very good parenting psychology there! I find with my teens that if I offer them an alternative that will require effort on their part, 99% of the time they'll do what I originally asked. Teenage laziness FTW!
