What I Ate Wednesday


I'm going to keep this What I Ate Wednesday short and sweet. We have been on the road visiting family these last few days and I haven't been taking a lot of food photos. I hope my Canadian peeps had a great Canada Day yesterday and that my American friends have fitting plans for the 4th of July.

We have been consuming casual meals, as befits the warm weather we've had lately. One night it was tacos with veggies and refried beans (above), served with broccoli and mashed sweet potatoes.



We went out for lunch with my mom yesterday at The Minga, a local (to my parents) vegetarian restaurant I have talked about a couple of times before. I had a quinoa and veggie wrap once again.


And a peanut butter protein ball. I was kind of full from the tasty wrap, so I asked for a paper bag for the peanut butter ball. Even though both of my kids had already eaten their own peanut butter balls, they harassed me to no end about giving them mine. But I held strong. I deserve a treat too, no?


I also had a decaf almond milk cappuccino.


Back at my parents' house, we threw together a dinner of Gardein vegan chick'n cutlets, baked beans, chickpea salad and broccoli. Nothing fancy, but we'd rather spend time enjoying the lake views.
