What I Ate Wednesday

Here's a What I Ate Wednesday look at food highlights from the past week. Starting with the best highlight of all - sushi! All-you-can-eat sushi actually. My husband had a day off last week during exams and our first priority was a vegetarian sushi lunch.

The place wasn't super busy and our order began arriving in no time, beginning with my favourite part - the maki rolls. I absolutely love the veggie green dragon rolls, filled with yam tempura. Yum. I want more now actually.

As the table filled up, you can see my husband was in his happy place. As was I. Nothing like stuffing yourself full of Japanese food!

I also got takeout from the health food store one day. I kind of threw it all into a container, so it came out looking messy like this. There was some kind of curried chickpea dish, a lentil dish, rice and roasted potatoes.

We also did some cooking this week. I continued to try out recipes from Isa Does It, like this Lentil-A-Roni. It was super easy to make and very tasty. I figured it would be perfect for the kids, but my son wouldn't even try it and my daughter only ate a bit. The husband and I gulped it down though.

If the Lentil-A-Roni was good, the Tofu-Mushroom Stroganoff was great. Another fairly-simple-to-make recipe that had us fighting over seconds.

My little girl was getting bored while I was cooking, so I asked her if she wanted to take the first photos of the tofu stroganoff. She was pretty excited. I'm sharing one of her photos (above), because I think it's cute how she sees things so differently from her level.

On Monday rain was once again threatening, so I persuaded my husband to barbecue while he still could. We had veggie burgers, potatoes, veggie dogs and portobello mushrooms.

I had leftover potatoes and a portobello mushroom for lunch on Tuesday, along with hummus and tortilla chips. We picked up a case of Sanpellegrino aranciata and limonata recently. I usually pass it up because it's hard to resist once it's in the house. But hey, it contains no artificial colours or flavours and it's made in Italy! So it's a great once-in-a-while-treat.

It's strawberry season here in Ontario, so I decided to create a new strawberry muffin recipe. Yesterday, I was able to pair my usual peanut butter and jam on toast breakfast with a yummy vegan strawberry banana muffin.

Here's the official photo. I will be sharing the recipe here on the blog on Friday.

What have you been eating and enjoying lately?

  4. So yummy! It has been either thunder-storming or threatening to thunderstorm all June, so we haven't grilled as much as I'd like-- but seeing your grilled portobello has my tummy rumbling!
