What I Ate Wednesday


I didn't take that many food photos this week, so I'm just going to dive into my Tuesday day of eats. I went to the grocery store early in the morning. By the time I came home I just had enough time to throw the ingredients for a soup in the slow cooker before a scheduled phone interview at 10:00.

Which means I didn't eat until 11:00. By then I figured a full breakfast would be a waste, so I sliced up an apple and a Cara cara orange to munch on while waiting for lunch to cook.




Specifically I waited for these Gardein breaded chick'n tenders to cook. I put them on a wrap with romaine lettuce, spinach, honey mustard and mayo. Yum.




In the afternoon, I snacked on vegan raspberry and cherry chocolate from Flirt.




Late in the day I realized I was feeling dehydrated, so I filled my water bottle with water, strawberries, blueberries and lemon juice. I also snacked on a few dried apricots.




At dinner it was time for that slow cooker vegetable soup with pasta.




We had gravy left over from the Gardein vegan holiday roast dinner we had on Sunday, so I cooked up French fries to pour it over. We also had steamed broccoli with minced garlic, olive oil and salt.




Here's what was left of our aforementioned Sunday dinner on Monday. I had cooked the holiday roast with potatoes and carrots and there was a little bit left for my lunch. We also had short grain brown rice with mixed veggies.

And why did we eat a holiday roast you might ask? We couldn't find it in the stores when we needed it at Christmas. They got them in at our local store after Christmas and they marked the price way down to clear them out. That roast is so delicious. I think I should be a spokesperson for Gardein.

  2. That all looks great! I love gravy on my fries!! I'm a Jersey girl through and through when it comes to some of my favorite food combinations!! Fries + gravy + melted mozzarella cheese = disco fries/perfection. :D

  4. Yum everything looks so good. I love fruit in my water as well makes it so much better than just plain.
