What I Ate Wednesday, with chocolate and peanut butter


It's What I Ate Wednesday...in December! Can you believe the year has nearly passed? Let's enjoy what we have left of it, including all the holiday festivities with family and friends. And let's make cookies!

It's Christmas Cookie Week here on Woman in Real Life. There are three vegan cookie recipes to be enjoyed so far, all of them delicious and pretty darn easy to make - just the way I like them!

I have eaten about half the cookies I made this week in the name of "taste testing." Okay maybe not half but quite a few! I have also enjoyed some "regular" food, like this wrap I made for lunch one day. I stuffed it with leftover Gardein chick'n nuggets, a rice/quinoa blend, lettuce and tomato slices. I didn't have an appropriate sauce so I just drizzled on olive oil and sprinkled on salt.


I had refried bean quesadillas another day for lunch. My husband made his homemade guacamole. I also had sliced beets on the side.


My Tuesday meals began with toast topped with peanut butter and jam. I also "taste tested" another peanut butter and chocolate ball.


Peanut butter and chocolate seemed to be the theme yesterday. As I was heading out to do an interview for a wedding magazine, I grabbed a peanut butter chocolate chip Pro Bar in case I got hungry on the road.


Back at home for lunch, I had leftover noodles. There were stir-fried veggies in there, but most of them were eaten the night before. I steamed broccoli to go on the side.


I made homemade pasta sauce for dinner. I didn't get a picture, but here's one from another day. Of course, I didn't actually make tofu balls last night, but I sure wish I had!

  3. I made the pecan coconut cookies again but this second time they rose more like little pillows (still taste great!) Everything was pretty much the same so I don't know what I did wrong there! Do you think they'd freeze well from now until Christmas? We're have autumn weather now in our summer so I want to get all my baking done while it's cool, though I'd have to freeze everything (mostly so I don't eat it all!)

    1. actually I've already taken two out of the freezer... I don't think they'll last another few weeks.

    2. That's so funny! I put mine in the freezer and took two out last night! I didn't even wait for them to defrost. Just ate em up. Yes, I think they would be find until Christmas in the freezer. Although I think ours will be eaten too...along with the peanut butter balls...I keep taking those out of the freezer all the time. I have to move everything to the basement freezer because I'm too lazy to go down there! ;)

      Hmm...I wonder why they turned out different this time. Who knows eh? It happens. :)
