What I Ate Wednesday


Happy hump day! We are looking at a very pleasant week here weather-wise, with warmish, sunny days all through the weekend. Good news.

I am starting off What I Ate Wednesday this week with a look at one of our after-school fruit platters. The kids enjoy these. They gobble down fruit they might not otherwise eat on their own. Plus, I eat fruit I might not otherwise eat on my own.


I have also been continuing to fill my Citrus Zinger with fruit to ensure that I drink lots of water during the day.


Here's a great meal when you are in a hurry. We had this for lunch on Saturday. My husband whipped together a chickpea salad with tomatoes, pickles, red onion, olive oil, vinegar and salt. We served it on warmed naan bread with lettuce. Healthy, quick and delicious.


We had friends over on Saturday night, which meant lots of leftovers for lunch on Sunday. Lentils and rice, of course, plus pasta and rapini. We actually served the rapini on pizza the night before.


My Tuesday started with a slice of spelt bread, toasted and topped with pb and j. I also had an Envirokidz peanut butter and chocolate bar. So yummy. And a decaf coffee with coconut milk creamer.


Tuesday's lunch was leftovers from Monday's dinner - garlic noodles, tofu baked in teriyaki sauce, broccoli cooked in minced garlic and roasted asparagus.


We also had leftovers for dinner. More lentils and rice from Saturday, tofu from Monday and vegetable soup from Sunday's dinner. The fridge is pretty much empty now, except for the organic salad mix. I always let half of that go bad!

  2. Always looks delicious, Wyatt would go nuts for that fruit platter. He'd eat nothing but fruit if I let him!

    1. My guy was like that when he was little too. Sometimes we had to stop him from making himself sick on fruit!
