What I Ate Wednesday - with the Beastie Boys


I remember when grocery shopping used to be fun. I still like to browse, read ingredients lists and pick out new products to try, but I have so much stuff to get now that it's a little overwhelming. I have to please four picky people (including myself), think about what to make for dinner, devise ways to get the kids to eat healthy snacks and figure out what to pack for those dreaded school lunches.

Once the kids were off to school today, I stopped by No Frills just to pick up some fruit for lunches and snacks. Close to $200 and a full trunk later, I drove home thinking now I have to get all this stuff out of the car and put away. For motivation I put a Beastie Boys cd in the stereo. I figured they could keep me moving if anybody could. Anyway, that's done, the Beastie Boys are still running in the background, and it's time to move on to What I Ate Wednesday and a look back at some food highlights from the past week.

I chowed down on a whole bunch of these vegan Triple C Bars, above. They are completely addictive. Just ask my mom - she made some herself the other day, and she rarely ever bakes anymore. She just had to have them!


I have a habit of going right to the computer in the morning and forgetting to drink water for most of the day. I made an effort to change that this week by filling up my Citrus Zinger each morning. I squeezed an organic lemon on the bottom, added peach slices, frozen blueberries and a squirt of agave nectar. My new problem is that I have to get up off my butt and refill it, because I enjoy drinking my water so much now.


I cooked lentils and rice, my all-time favourite recipe, for dinner one night. I had it for lunch the next day with a Gardein veggie burger (topped with pickles as you can clearly see).


My Tuesday meals started with a breakfast of Stonemill multigrain sourdough bread, toasted and topped with peanut butter. I had my usual decaf green tea as well. I filled my Citrus Zinger with lemon juice, peach slices and cubes of watermelon. I added a tiny bit of orange juice to the water as well.


More leftover lentils and rice for lunch.


I also had a salad. I combined mixed greens with a bagged kale salad that I bought at Costco. It comes with a topping mix of seeds and dried cranberries.


When the kids came home from school I started snacking with them. They were eating sea salt Popcorners from a giant bag (also from Costco). I thought I would just have a couple, but you know how that goes. I also had a handful of macadamia nuts.


I got these Dan-D-pak sea salt macadamia nuts in my September Snackbox. My monthly Snackbox subscription service helps me to discover healthy, tasty snack products I might not otherwise come across. Fortunately for me, the kids were horrified at the thought of trying a nut. Oh my goodness, too healthy! That means more for me...unless my husband sees them.


We had to have dinner early because my son had basketball rep team tryouts. I wasn't hungry yet, so I just had a bit of homemade vegetable and pasta soup.


Later that evening I had vegan banana bread that I made earlier in the day. I toasted it in the toaster oven and topped it with some vegan margarine. Yum.

  1. Your dad liked the triple c bars as well. he made his usual midnight fridge raid ----and broke off and ate big hunks of them.

  2. I made a peach 'crisp' with some leftover tinned peaches ... yummy. Your snacks look much better ;) Here nuts are a favourite to snack on (almonds usually). I really like the roasted unsalted almonds. I like your citrus bottle, and haven't seen one before. Does the fruit get broken down, or does it just flavor the water? Wendy

    1. Yum, fruit crisp. I have to do that. But I'll wait a couple of days, since we are getting some warm days now. I'll bake when the cool weather returns! :)

      The citrus bottle is great, although I find a bit of water leaks out of it sometimes. The fruit stays as is, and just flavours the water. :)

  3. Oh, that water looks so good!! Yum! I squeeze a bit of lemon or lime into mine, but this just takes it to a whole new level!

  5. I am so jealous of how healthy you eat! It is definitely some motivation for me. I love that Citrus Zinger, don't think I have seen that before. I have a hard time drinking plain water so this may help.
    Also how great are the Beastie Boys to get moving...I love the song "Girls" it is a guilty pleasure.
