I can't count the number of times our little family has shared Taco Tuesdays. And tacos have never once failed to be a hit with the kids. Given the success of Taco Tuesdays, we recently decided to expand our Mexican food options, adding Fajita Friday to our weekly menu plan.
Friday is the perfect day to kick back, relax and take a break from a busy week. Clearly you don't want something too challenging on the dinner menu. But you still want your meal to be nutritious and delicious. Fajita Fridays are just the thing - fun, easy and satisfying.
A fajita is typically a flour tortilla filled with grilled meat, onions and bell peppers. The great thing about Mexican food is that it can easily be made vegetarian or vegan. For our Fajita Friday, I sliced a couple of Gardein vegan chicken breasts and sauteed the slices in olive oil to brown them a bit. I added sliced peppers and onions and cooked the mixture for a few more minutes. I then added 1/4 cup of water and the seasoning mix from an Old El Paso fajita kit.
Once everything was ready to go, we laid it all out on the table so each person could pick their own fixings. My daughter is kind of particular, so we heated up a can of refried beans - her standby tortilla filler.
We topped our fajitas with taco sauce, guacamole, salsa and cheese and served sweet potato fries on the side.
With Friday being the kick-off to the weekend, the husband and I indulged in some celebratory margaritas.
My daughter decided to make pink lemonade for her and her brother. We all enjoyed our first Fajita Friday, and it definitely won't be our last.
