What I Ate Wednesday


Happy Wednesday, August 14th! I'm looking on the bright side today. It's sunny outside and we still have a couple more weeks of summer to enjoy. Right? Back me up here.

The good news is, summer, fall, winter or spring, you can always enjoy a good meal. Last Thursday, my husband prepared a lovely dinner of homemade vegetarian sushi and miso soup. Yum!


We decided it would be fun to put baked sweet potato fries in some of the rolls. It was tasty, kind of like easy tempura rolls. He put fried mushrooms in other rolls. And beets in others. Of course, we always include avocado, carrot and cucumber rolls too. My daughter likes the simple stuff. She also had a friend over that night, and she only liked plain cucumber.


He put tofu in the miso soup. The kids are kind of picky eaters, but they like miso soup.


We also had this kale, cabbage, Brussels sprouts, broccoli slaw from Costco.


And edamame.


Another night I made these nutty noodles from "The China Study Cookbook." I'm getting ready to review the book, so I'm preparing some of its whole food, plant-based recipes.


These healthy oatmeal cookies came from "The China Study Cookbook" too.


And now for my Tuesday food consumption. My daughter made these blueberry pancakes (from a mix) in the morning. At 8 years old, she is expressing an interest in cooking. That's okay by me! I hope she cooks full meals by the time she's a teen.


I neglected to photograph my lunch. I had leftover rigatoni with tomato sauce and some of that broccoli slaw I talked about earlier. For dinner, we had salad, mashed sweet potatoes (uh-oh, somebody's thinking about fall) and Gardein faux chicken nuggets in orange sauce. They sell a giant, more affordable bag of these at Costco now. Give them a try if you see them! They are tasty and much healthier than meat.


We also had broccoli and rice.

Oh, I almost forgot. We went to the drive-in last night to see The Smurfs 2 and Elysium. I completely lack self-control when it comes to eating at the movies, especially when hidden in a car. I had a coke, a bunch of popcorn, some Mike & Ike's and some dark chocolate-covered almonds. I was afraid that I wouldn't be able to stay awake for the second movie, but with all the sugar and colour going through my system, I was up long past the end of the movie!

  6. My kids would have inhaled the veggie sushi and miso. I can't picture you pigging out at the movies but, ya, I chow down, too. Buttery popcorn, large coke and something chocolate... I wish we had a drive-in here, ours closed down years ago.

    All of the food looks de-licious!

    1. Unfortunately I can pig out with the best of 'em Wendy! I love having the drive-in around. It almost closed down (because the land is more valuable to developers) but someone has reopened it for three years. It's a great tradition for kids. :)
