Menu Plan, 25/52

Taco Tuesdays

If you have been using the soon-to-retire Google Reader, please follow Woman in Real Life on Bloglovin' here.

Last week, I skipped doing a menu plan entirely. We were so busy in the evenings that I decided to wing it instead. Super busy weeks are probably the best time for a plan, actually, but sometimes something's gotta give.

This week, I am taking inspiration from the Vegetarian/Vegan Starter Kit from PETA that I picked up at the Veggie Fest on Saturday. Browse PETA's recipes here. I was also inspired by all the kale and other greens on display at Veggie Fest. I'm off to Costco, a surprisingly good source of greens. I'll get organic mixed greens for salad, organic spinach and whatever mixed bag of greens they have this week.

Here's my menu plan for this week. Click on the names for recipes (if available).

    1. You are most welcome Rebecca! I find I need regular reminders to eat well, or I will get too lazy to make salads!!

    1. Thanks for hosting! Now I better tear myself away from the computer and buy some of those ingredients! ;)

  3. The only good thing PETA does is recipes. Otherwise I have no use for them as a vegan.

    1. I would be interested to know why you don't like them.

  4. I adore kale & greens in general! My husband has been doing fancy things with cabbage lately that I am loving (one of our "guys" at the farmer's market had been bringing in the most stunning cabbages)

    1. I love greens, but I prefer if someone else washes them! I bought a cabbage a couple of weeks ago that's now rotting in my fridge. I wish your hubby was close by. This is not a stunning cabbage though. It looks pale and sickly. ;)

  5. I try to meal plan, but more often than not it doesn't happen. However, since next week's so busy... I actually did it. You always motivate me!
