What I Ate Wednesday


I'm flying by the seat of my pants this week when it comes to meals. When we returned from a weekend away, I didn't have the energy (or the groceries) to put together my usual Sunday menu plan.

This vegan Tofurky roast and vegetables dinner, above, was on the last menu plan. We enjoyed it last Wednesday evening, having neglected to prepare it on time for Easter supper.

Here are some other "What I Ate Wednesday" highlights from the past week:


We had this cucumber and grape tomato salad with the Tofurky roast.


One day, with little in the fridge, I whipped together a stir-fry with frozen veggies, hoisin sauce, Bragg's and kamut udon noodles.


Along with the tofu lasagna I showed you yesterday, on Sunday my mother-in-law also served us breaded and fried tofu, breaded mushrooms, rice balls and salad. We also had some of my father-in-law's wine. All this at lunchtime.


Yesterday, I started the day with almond butter on toast (not shown). Lunch was this Sol Cuisine veggie burger, as well as sweet potato chips and hummus.


For dinner, I made baked tofu, mashed potatoes and salad. Mashed potatoes are always a hit with the kids.

  2. Tofurkey! I haven't had one of those in so many years. I remember them being a little odd, but also tasty in it's own strange way :)

    1. I agree with your description completely...they are odd but tasty. I actually prefer Gardein's meatless roast, but I didn't see that in the store.

  3. breaded-fried tofu, oh my! I keep saying I have to get back in to meal planning but 'forget'... I'll try to make up a plan for next week ;)

    I've never tried the Tofurky before, I've heard mixed reviews on its taste...

    1. Thanks! I am trying my best, but sometimes I wish I had more energy for cooking!

      I wouldn't have the Tofurky roast often, but it was nice for a change. The Gardein roast is definitely better in my opinion. :)

  5. Never tried tofurky before! Your meals look really good though, one of my favourite things to add to a meal is a cucumber and tomato salad, so delicious and refreshing!

  6. We are completely winging it this week-- we've been really good about creating a menu for each week lately, but this last week we are basically attempting to clean out the fridge by eating whatever we happen to stumble upon. Its the end of the semester, you know how it goes!
