What I Ate Wednesday, fruit edition

It's What I Ate Wednesday and I am taking a look back at some food highlights from the past week.

I discovered a lot of fruit pictures on my camera. I'm continuing to serve fruit for me and my family as often as possible.

I decided to chop it all up into a fruit salad one day for a change.

On Sunday, we started our March Break travels with a visit to my sister-in-law's place. She served this lovely platter of fruit.

My brother-in-law even served a vodka drink with fresh fruit in it. I like a guy who serves me fruity drinks.

Of course, they served lots of delicious food too. My sister-in-law made a variety of pizzas to suit every taste. I had one with two layers of spelt crust with onions in the middle.

My mother-in-law brought her amazing vegan tofu lasagna. We inhaled it pretty quick. She really should be selling it.

The last couple of days we've been in Niagara Falls trying (and failing) to find something healthy to eat. I have to plan better next time.

How do you deal with eating on the road?

Congratulations to Renata, the winner of a box of Health Warrior chia bars. Look for my email soon Renata! Thanks for entering.

    1. Me too! The best I could do is watch her make it. She never uses recipes.

  2. That tofu lasagne sounds so good- i can't imagine, is it tofu in place of ricotta? Yum... and fruit is always so refreshing.

    1. Yep, tofu in place of ricotta, and no cheese, and yet, delicious! I don't know how she does it. :)

  4. All that fresh fruit looks amazing! I love fresh fruit but normally just stick with apples and bananas.

    1. Apples and bananas are always good, but I need variety to keep from getting bored. :)

  5. So much fruit! I am obsessed with fruit and never seem to chop it up. I always end up getting lazy and eating it whole but preparing it as a large fruit salad is a great idea so that I can just pack a little container of it everyday for work!

    1. I often make a fruit salad to use up any fruit that is getting soft. :)
