Menu Plan, 11/52

 

Last week's meal plan went well. Pictured above is Friday's meal. My husband made pizza, roasted vegetables and salad. This is my vegan pizza with Daiya cheese.

Monday's Sesame Broccoli Stir-fry from "Vegan Planet" was tasty. We ate it all up for dinner and I didn't get a photo.



This is Tuesday's Pasta Fagioli, which really came out like a nice soup.


Here's Thursday's Ginger, Potato and Cauliflower Toss served over rice. This recipe is from "The Garden of Vegan." It is quite delicious, although the kids would not eat it. Well, my son forced it down. The girl would never do that.

Yesterday I made Versatile Vegetarian ChiliIt was super easy to make and turned out quite well.

Today we are eating at my sister-in-law's house...which means lots of good Italian food. Can't wait!


This week's menu plan is kind of informal and incomplete, because it's March Break and we are doing lots of family visits.

  6. I could get down on that cauliflower potato mixture right now! Yum! Honestly, how do you like the vegan cheese? I've never had any that could even compare.
