What I Ate Wednesday and a cookbook giveaway


Happy hump day! I hope your week is going wonderfully well. We are freezing here (-15°C) and poor Jolene the beagle mix hasn't been getting all her regular walks.

But we can stay inside and eat, right? I showed you some highlights from last week's eats when I shared my weekly meal plan on Sunday. 

Not on the meal plan was Saturday's lunch, which my husband put together. He made fresh guacamole and served it along with tortilla chips and cheese. The chips in the picture are mine, so they have vegan Daiya cheese on them. We also had cantaloupe.



Sunday was my husband's cooking day. We were out at an Italian wedding celebration on Saturday (eating pasta of course) so we had our planned Saturday dinner of Spaghetti with Bok Choy on Sunday instead. It is quite delicious. My husband added sundried tomatoes to the recipe and they made for tasty bites. Here's the recipe. It calls for a poached egg on top.



I had it for lunch the next day as well, with rice crackers and hummus.



I am continuing to serve fruit platters to the kids regularly. It's great because I also munch on more fruit myself. I keep finding different serving platters and varying the fruit to keep the kids interested.


I had banana bread for breakfast one day with decaf green tea.


 Today I was lazy and I had Barbara's Bakery Peanut Butter Puffins with soy milk.

  2. This all looks so tasty, but it was the banana bread that got me too. Chocolate chips eh? I thought they were dates. I'm getting the distinct impression you have a bit of a sweet tooth! Wendy

  3. Yum! You always have the yummiest looking food! I had roasted veggies for lunch today and half a grapefruit. The Florida grapefruits are SO yummy right now! Now I am craving some banana bread! Angie xo
