What I Ate Wednesday


Noodles. Yum. Probably my favourite food in the world. Well, except maybe chocolate.

Wednesday has rolled around once again, and it's time to share food highlights from the past week.

My husband made garlic noodles, breaded tofu and broccoli one night. Here's what was left for my lunch the next day. Nice to see that the family ate most of the broccoli.


It's been another soup kind of week. The weather can't decide if it's spring or winter, and soup just feels right. I made this minestrone one night. This is my lunch leftovers again, served with tortilla chips. Don't ask me why...I just felt like something salty.


Leftover bean soup for another lunch. This time I paired it with Mary's Gone Crackers gluten-free crackers and hummus.


Another minestrone soup one day. For more protein, I served it with a Gardein faux chicken patty. Best fake meat ever. I don't eat it often because it has wheat in it. When my tummy is good, I start to indulge, until it goes bad again.


And finally, Apple Crisp With A Twist. I used spelt flour for this to reduce the gluten levels. I added some raspberries and flax seeds (hence the twist). Jenn, our What I Ate Wednesday host, is asking us to share healthy holiday recipes. This is one! Recipe here.

  2. Yummy, I love noodles and tofu too, one of my favorite meals. I've never had faux chicken. I didn't grow up eating meat, so sometimes that stuff freaks me out a little, but I bet my husband would love it!

    1. That's interesting. Were your parents vegetarians too? I became vegetarian in my twenties, so I am comfortable with the faux meat. As long as it's not real, I'm good! ;) My kids will be like you...except I give them fake meat so they are used to that.

  3. We don't have any gluten sensitivities and use wheat flour for baking, but otherwise I try to steer us toward oats, rice, quinoa, barley, etc to get grains in. I definitely think our culture overdoes the wheat, and might not have so many issues with it if we stuck to whole grains and had more variety.

    1. I don't have a diagnosed gluten sensitivity either, but I'm pretty sure I have IBS and I find that less wheat seems to help. I like your choices. I have to use quinoa more! Like you say, variety is key. :)
