What I Ate Wednesday, with a delicious stew



I don't have a whole lot to report this What I Ate Wednesday. Our weekend schedule was completely based on my son's basketball tournament. Five games. Out of town. Equals few food pics.

I did have this one fabulous lunch this week. I love vegetables. Not that I want to go to a restaurant and only eat salad, just so you know. No vegetarian does, by the way. I like to have other stuff on my plate. On this particular day, I had leftovers from two dinners to use up...cauliflower and rapini from one meal and roasted veggies, beets and breaded tofu from another. I ate all this for lunch and I was stuffed!


Another day, I made Angela's Sumptuous Shepherd’s Stew. It might look boring in this picture, but it was a super tasty combo of veggies, tofu and a rich broth. I highly recommend it.


Yesterday was Taco Tuesday once again in our home. In between a visit to the dentist and my daughter's ballet class, we scarfed down hard and soft tacos filled with beans, refried beans, sauteed peppers and onions, guacamole and salsa. My husband made some homemade fries too.


This week, I have also been stuffing my face with the chocolate macaroons I showed you yesterday, in my homemade hostess gift post. I just pop them in every now and then, like they don't have any calories whatsoever.

    1. Hi Tabetha! The tournie is over. His team got bronze. They were doing really well and then they played a couple of crazy impressive teams! :)

  4. You're so right about going to restaurants! Don't you love it when you're starving and someone says, "Well, they have salad". Makes me crazy!

  6. That stew does look delicious! Unfortunately yes to the treats... my husband's been given cookies from work, and I can't stay away from them, plus the ones in our freezer... it's trouble!

  9. The thought of a warm hearty stew is making me hungry and it's only 7:30 in the morning. It all looks delicious and, yes, I've been eating way too many holiday treats. I'm treated out. :)
