What I Ate Wednesday, more fun with cooking


It's What I Ate Wednesday! I am sharing a look at some foods that my family and I have enjoyed over the past week.

I am continuing to have fun trying new, simple recipes. I don't go for anything too complex. If I do, I get hot and irritated by the time I put the food on the table. And that's no fun for anyone.

One night, I paired an old favourite, Tina's delicious lentils and rice, with a new recipe for rapini with rotini. The lentils and rice recipe is great for parties because it makes a lot. When I am cooking it for my family of four, I often have trouble. You can cut the recipe in half, but NOT the water amount. So, this time I tried six cups of water, and it worked out great.



The rapini and rotini recipe called for...duh, rapini...but also olives and optional beans. We used kalamata olives and cannellini beans.



Here it is with gluten-free rice rotini added. No, my kids won't eat this. That's why I included lentils and rice and broccoli. Sometimes my daughter also ends up eating a peanut butter sandwich.


I decided to make another berry crisp. This time, I used frozen cherries and strawberries, as well as fresh blueberries and raspberries. This one didn't turn out as tidy-looking as the last one.


At the Toronto Vegetarian Food Festival this past weekend, I picked up some of Peanut Butter & Co's Dark Chocolate Dreams. Peanut butter...and chocolate...for breakfast...yum. This was my Monday morning treat.


For Monday lunch, I had some leftover quick lentil soup I had made the night before.


I followed that up with a decaf green tea and a gluten-free vegan date square that I had bought at the festival from Bunner's Bakery.


Monday evening, I tried a new recipe for spicy eggplant and tofu. I was skeptical, because eggplant can be hit or miss, but this was quite delicious.


This morning, I didn't really feel like eating. But I feel sick if I don't. So, I added raisins and soy milk to some Nature's Path Peanut Butter Granola.
